Each week, James-Beard-award nominee Jeremy Hansen and his team will create a menu inspired by the cuisine of one of China's eight legendary culinary traditions.

The Chef’s Table

Each Thursday, Friday and Saturday, Chef Hansen will host a meal inside the kitchen where diners can watch the team cook and get special servings all evening. Seating very limited.

Guandong Region

Long known in the west as Canton, Guandong is a major trade region with close ties to Hong Kong. Yue cuisine utilizes a variety of meats from pork to snake to chicken feet and a cooking style that favors balance over extreme flavors and cooking techniques.

Shandong Region

Shandong is a northern province that sits just across the Yellow Sea from Korea. Northern provinces grow more wheat than rice, but its position on the coast also means a lot of seafood, making the cuisine an interesting mix of heavy and light dishes featuring eel, herring, carp, noodles and steamed buns.

Beijing Region

The imperial capital for centuries, the best chefs in China would come and cook in the yushanfang, or "emperor's kitchen," creating an incredibly varied and aristocratic food tradition. Modern Beijing is a city with a vibrant street food culture, taking the variety of yushanfang to the common person.

Sichuan Region

The most populous region of Western China, Sichuan is known as the "Heavenly country." Its cuisine is frequently stir-fried and braised, producing big flavors that are pungent and spicy, with liberal use of garlic and the fragrant, citrusy Sichuan pepper.

The largest city in China has long been a center of trade between East and West. Sitting on the sea and amid the fertile Yangtze river delta, its cuisine tends to be light, mild, slightly sweet and exceedingly healthy — boasting foods both low in sugar and fat — with an emphasis on utilizing local ingredients.
